Words can’t even begin to describe how thrilled I was to discover a Paleo recipe for Pumpkin Spice Lattes. The fact that they are in the crockpot made it even better! This recipe was super easy to mix together and since I’m not a morning person I decided to put it in a mixing bowl in the fridge the night before serving it so all I had to do in the morning was throw it in the crockpot. I made it for the Saturday after Thanksgiving when we were having my niece’s 1st birthday party and everyone loved it and nobody had a clue that it was Paleo! Here’s the recipe which I got from Domestic 360:
Paleo Pumpkin Spice Lattes
- 4 cups coconut milk
- 1/4 cup canned pumpkin
- 2 tbsp vanilla extract
- 3/4 tsp pumpkin pie spice (or 1/2 tsp cinnamon with a sprinkle of ground cloves and nutmeg)
- 4 cups strong coffee
- 1/4 cup maple syrup
Directions: Whisk in a bowl and then dump in your crockpot. Put crockpot on low for 2 hours prior to serving (I did it for more like an hour) and then switch to the “keep warm” setting if you have it or leave it on low. Put on some UGG boots and revel in that white girl feeling.
